You can substitute peanut butter for almond butter in this healthy treat. Ingredients1/2 cup unpasteurized honey 1 cup raw sunflower seeds 1 cup coconut milk powder 1/2 cup cacao nibs (you can substitute chocolate chips) Nibs are healtier 1/2 cup shredded non sweetened coconut to put into the mix 1/2 cup shredded non sweetened coconut to roll the balls in 1/3 cup cacao powder You can make variations with any raw nuts, seed or dried fruits Do not use roasted nuts or seeds if you want to keep a high nutrional value in your treats. DirectionsMix the almond butter, honey and coconut milk powder together in a medium bowl, by hand. Add the sunflower seeds, cacao nibs, and shredded coconut to the mix. Mix by hand. Put the 1/2 cup of extra shredded coconut into a coating dish Scoop out a tablespoon of the mixture into your hand and roll into a ball. Roll the ball in the coconut. Place your finished coconut balls into something like a pie plate. When completed, put them into the refrigerator where they will firm up. Once they are firm you can transfer them into a covered sealed container to stay fresh. Keep refrigerated until you eat.
