The best tater tot casseroler recipe around.
500 grams ground meat (lamb, beef, turkey etc.)
2 cloves garlic, minced
2 Tablespoons vegetable oil (to drizzle in pan)
1 large bell pepper (cut into small 1/4 inch squares) - about 1 cup when cut
1 cup green chickpeas
1 Tablespoon Braggs Soy Sauce (or your choice of soy)
1 Tablespoon brown sugar
1/2 Tablespoon red wine vinegar
1/2 Tablespoon tomato paste
1/2 Tablespoon ketchup
1 Tablespoon Worchester
2 cups tater tots
1/2 cup asiago cheese, grated
Preheat oven to 425F, and line a baking sheet with parchment paper.
Line the baking sheet with the tater tots and cook for 25 minutes, flipping them at the 15 minute mark.
While the tater tots cook, drizzle the oil into a large saucepan, and add garlic, letting it cook until softened and golden.
Once golden, add the ground meat and cook through (about 15 minutes), stirring often.
Season meat in pan with Braggs, brown sugar, red wine vinegar, tomato paste, ketchup, and Worchester.
Mix thoroughly and season with salt, pepper and red chili flakes to taste.
Add bell pepper and green chickpeas and mix around. These do not need to cook for long at all.
To serve transfer the ground meat mixture to small casserole dish and top with crunchy tater tots.
Grate Asiago cheese and return to oven for 3 more minutes to melt the cheese.
Serve with a fresh salad.
