Crunchy Peanut Butter Drop Cookies Recipe

A delicious peanut cookie recipe you can throw together in 5 minutes and the family will go nuts over.
1/4 cup margarine or butter
1/2 brown sugar
1/2 cup caster sugar
1 egg, lightly beaten
1 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 cup corn flakes, lightly crushed
Preheat oven to 350F.
Line a baking sheet with parchment paper.
In a large mixing bowl using an electric mixer with medium speed, mix the peanut butter and margarine and beat until creamy .
Add sugar and beat again. Add egg gradually beating well .
In another bowl, stir together the flour, salt, baking soda, baking powder.
Beat the flour mixture into the creamy mixture a little at a time until it forms a cookie dough batter.Gentle stir in the crushed cornflakes.
Spoon the cookies onto the baking sheet.
Space them slightly apart.
Flatten them with your hands.
Place into the preheated oven and
bake for around 10-12 minutes.
They will raise a little bit.
Remove from the oven and place baking sheet onto a cooling rack.
Let the cookies cool a few minutes, then move the cookies directly onto the cooling rack.
