Fancy Strawberry Cake Recipe

This fancy strawberry cake is a gorgeous moist vanilla cake, a light mousse filling and vanilla glazed strawberries.

Ingredients

Simple White Cake

1 cup granulated sugar
1/2 cup butter, at room temperature
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk

Mousse Filling

3 eggs, separated
2 Tablespoons unsalted butter, melted
2 teaspoons vanilla extract
1/2 cup sugar
1 cup heavy whipping cream
3 Tablespoons sugar

Vanilla Glaze

1/2 cup confectioners sugar
1 Tablespoon milk
1/2 teaspoon vanilla

1 pint of fresh strawberries

Serves 6 - 8

Directions

Cake

Preheat oven to 350 degrees F.

Grease and flour a 9 inch round cake pan, with butter.

In a medium bowl,using an electric mixer, cream together the sugar and butter.

Beat in the eggs, one at a time, then stir in the vanilla.

In a measuring cup, combine the flour and baking powder together.

Add dry ingredients to the creamed mixture and mix well. Finally stir in the milk until batter is smooth.

Pour batter into the prepared pan.

Bake for 30 to 40 minutes in the preheated oven.

Cake is done when it springs back to the touch.

Mousse Filling

Whisk together egg yolks, melted butter, 1/2 cup of sugar and vanilla, until smooth. Set aside.

In a separate bowl whip whipping cream and 2 tablespoons of sugar to soft peaks. Set aside.

In another bowl whip together egg whites and 1 tablespoon of sugar to soft peaks.

Gently fold together whipping cream and egg whites until well incorporated. Fold in egg yolks, until well combined.

Vanilla Glaze

Whisk together sugar, milk and vanilla until well combined.

Assembly

Cut cake in half. Layer the bottom of a 9 inch round spring form pan with cake. Pour a bit of mousse on top. Place strawberries with tops cut off in the mousse tops down. Pour the rest of mousse over top of strawberries until they are all covered. Place cake layer on top. Pour vanilla glaze on top of cake making sure its evenly spread out. Chill for 4 to 5 hours, to make sure mousse has set. Serve.

Garnish with fresh strawberries
