Healthy Apple Cake Recipe
This healthy apple cake recipe is filled with all sorts of goodies that will energize you mid day.
3 cups nonfat yogurt
2 Tablespoons ground flax seeds
1/3 cup spelt flakes, or large oat flakes
2/3 cup dark brown sugar
1 Tablespoon vanilla
2/3 cup spelt flour
2/3 cup all purpose flour
3/4 cup ground walnuts
1 1/4 teaspoons baking soda
1 Tablespoon pumpkin spice
3 peeled, cored, diced apples
1/2 cup walnut halves
Preheat oven to 350F.
Grease a 9x13 inch pan.
In a large bowl, beat egg with yogurt.
Stir in the flaxseed and spelt flakes. Let stand 10 minutes.
Add the brown sugar and vanilla to the yogurt mixture and blend in well.
In a medium sized bowl, mix together spelt flour, all purpose flour, ground walnuts, baking soda, and pumpkin spice.
Add the dry mixture to the yogurt mixture and use and electric mixer to blend together.
Use a wooden spoon to fold in apple pieces.
Pour into the prepared baking pan and place the walnut halves onto the top.
Bake for 55-60 minutes, until it tests done.
Place onto a cooling rack.
Once cool, sprinkle with confectioners' sugar.
