Healthy Salad Recipe

This colorful healthy salad recipe is full of tasty good things to eat. Fruit combined with vegetables makes for some of the tastiest salads.
1/2 cup olive Oil
1/4 cup lemon juice
1 tsp balsamic vinegar
1 heaping tbsp pure unpasteurized honey
1/4 cup fresh oregano
1 tsp salt and pepper each
(Makes enough for 4 salads)
1 package mixed salad or 1 head green leaf lettuce
1 cup arugula
1/2 cup carrot, julienned
1/2 cup corn
4 radishes, sliced thin
8-10 cherry tomatoes
8-10 red grapes, cut in half
Lemon Herb Dressing
Put the dressing ingredients into a small container and mix it all together with a fork or a hand held blender.
Set aside until are ready to use it on your salad.
Wash and dry all vegetables.
Put salad mix, or green leaf lettuce, and arugula into salad bowl, tearing into bite sized pieces if necessary.
Pour desired amount of dressing over salad and toss gently to coat. Taste and add more dressing if needed.
Sprinkle carrots over the centre of salad.
Sprinkle over corn.
Top with radishes, cherry tomatoes, and grapes over salad.
Gently toss the salad again at the table before serving.
Note: Do not allow dressed salad to sit for a long time, or lettuces will get wilted.
