Pan Fried Veggie Burgers Recipe

A bean veggie burger with high quality protein and delicious flavor.


1 Tablespoon canola oil, divided
1/4 cup minced onion
1/4 cup finely grated carrot
1/4 cup finely chopped celery
1/4 cup finely chopped fresh parsley
2/3 cup drained canned white kidney (cannellini) beans
1 egg, lightly beaten
1/3 cup seasoned dried bread crumbs

Serves 2-4


In a 10-inch skillet, heat 1 teaspoon of the oil.

Add onion, carrot,and celery; and cook over medium heat, stirring occasionally, until veggies are soft and moisture has evaporated. Set aside to cool.

Place the drained, rinsed beans into a bowl and use a fork to mash beans.

Stir in the lightly beaten egg.

Add the bread crumbs and veggies. Mix until thoroughly combined.

Shape mixture into 4 equal patties. Set patties on a plate and refrigerate covered, 20 minutes.

To cook, use the same skillet and heat the remaining oil.

Add the veggie patties; cook over medium heat, turning once, or twice, until browned on both sides and heated through.

Serve hot.
