Refrigerator Pickles Recipe

These refrigerator pickles are made without the need to cook anything and are ready to eat in a week.
1-2 medium onions, thinly sliced
2 1/2 cups sugar
1 1/2 cups white vinegar
1/4 cup + 1 Tablespoon pickling salt
1/2 teaspoon celery seed
1/2 teaspoon mustard seed
1/2 teaspoon dry mustard
a couple fresh sprigs of young dill
Wash and thinly slice the picking cucumbers and onions.
Put cucumbers and onions into a nonreactive jar.
Mix remaining ingredients in a mixing bowl and then pour over cucumbers, making sure all vegetables are submerged.
Place in refrigerator and allow to mature for one week.
In order to mix the brine throughout, once a day, flip the jar to make sure that the cucumbers and onions are getting covered.
