Salad With Boiled Egg Recipe

This simple salad with boiled egg recipe is delicious and filling.
1 small head butter lettuce, torn, washed and dry
1/2 head green leaf lettuce, torn, washed, dry
1 small head radicchio, core removed and thinly sliced
2 green onions, sliced
1/4 red onion, sliced
2 medium sized tomatoes, quartered
4 boiled eggs, cut into quarters
1/4 cup parsley, roughly chopped
1 garlic clove, crushed
1 1/2 Tablespoon fresh-squeezed lemon juice
1 1/2 Tablespoon olive oil
1 1/2 Tablespoon grapeseed oil
salt and fresh ground black pepper to taste
Be sure that all your vegetables are well washed.
Tear the lettuces into bit size pieces and put in a medium bowl.
Slice the radicchio, green onions, red onion and put in the bowl with the lettuce.
Cut the tomatoes into quarters or eights and add to the salad in the bowl
In a separate small bowl, combine the crushed garlic and lemon juice.
Whisk in the two oils, a little bit at a time, until the dressing is well combined. Add salt and fresh ground black pepper to taste.
Alternately, you can combine all the dressing ingredients in a small jar, close with a tight fitting lid, and give it a good shake until well combined.
Drizzle the dressing over the salad and toss until lightly coated with dressing.
Evenly divide the salad between four bowls and top each with 4 slices of hard boiled egg.
