Skewered Shrimp With Rice Recipe

A very yummy recipe for skewered shrimp served over broccoli and rice.
24 large shrimp
3 cups broccoli
1/2 cup orange pepper, diced
1/2 cup yellow pepper, diced
1/4 cup butter, melted
2 cloves garlic, crushed
2 tablespoons parsley, chopped fine
1 teaspoon lemon juice
1 tablespoon butter
Preheat oven to 350 degrees F. have ready a large foil lined baking sheet. and 8 short skewers
Cook rice according to package directions.
In a medium bowl combine garlic, parsley, lemon juice with melted butter. Toss shrimp in mixture until well coated. Skewer 3 shrimp on each short skewer.
Bake for 7-10 minutes or until cooked through.
Steam broccoli for 7 minutes.
Heat a large frying pan to medium heat, add butter and diced peppers. cook 2-3 minutes then mix in rice.
To serve devide rice into 4 bowls, top with broccoli and 2 skewers of shrimp.
