Spicy Roasted Potatoes Recipe

This spicy roasted potato recipe, roasts the potato wedges in honey, orange juice, and some spices and is covered in melted cheese.

Ingredients

3 Tablespoons butter, more for the pan
3 Tablespoons honey
1/4 cup orange juice
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
1/4 teaspoon paprika
4 medium potatoes, cut into wedges.
kosher salt
fresh ground black pepper
2 cups grated mozzarella cheese

(Serves 4)

Directions

Preheat oven to 400F.

Lightly butter a 9x13 inch baking dish.

Melt the butter in a small saucepan set over medium heat.

Stir in the honey, orange juice, cayenne pepper, cumin, and paprika.

Chop the potatoes into wedges and put them in the prepared baking dish.

Pour over the honey mixture, and toss until the potatoes are well coated.

Arrange the potatoes into a single layer and sprinkle with salt and pepper.

Transfer the potatoes to the preheated oven.

Roast for 45 to 55 minutes, stirring every 15 minutes, until the potatoes are browned and tender and the sauce is bubbly and thick.

Remove potatoes from oven, and sprinkle over the grated cheese.

Return potatoes to oven and bake for another 5 minutes, until cheese is melted.

Serve immediately.
