Tomato Zucchini Pasta Casserole Recipe
A Tasty recipe for tomato zucchini pasta casserole.
2 Tablespoons butter
1 large zucchini quartered lengthways and cut into small pieces
2 large tomatoes
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1 teaspoon dried parsley
1/8 teaspoon fresh cracked pepper
1/4 teaspoon salt
1 teaspoon olive oil
On medium heat, melt butter in a large frying pan .
Add the zucchini pieces and the tomatoes, stir in the seasonings stir and simmer gently for 5-10 minutes until cooked through.
At the same time, cook the pasta according to package directions, drain, return to the pan and add toss with oil.
Place pasta into a serving dish and top with vegetables to serve.
